Meiri Shuzo Co. of Mito, Ibaraki Prefecture, Newborn of the Takazo Distillery, which has been restored after 60 years since the fire.
General liquor manufacturer Meiri Shuzo K.K. obtained a license to produce whiskey on September 26, 2022. However, the company actually started making the whisky in 1952, but the whisky license was returned due to an accidental fire at the factory some 60-odd years ago. Since then, the company had given up whisky production.
After some twists and turns, in 2022, the company reopened the Takazo Distillery as a craft distillery made with human hands to match the size of the distillery at the time of reopening, and it continues to this day.
Mito is a “water city” with a rich vein of water surrounded by the Naka River and Lake Senba. The magnesium-rich water that comes from underground is one of the most important elements for whisky making. The rich bounty of nature is pumped up carefully and unchanged every day.
The distillers at “ TAKAZO distillery” are not only particular about water and barley, but also about research and development of yeast, which is important for determining the taste, day and night.
Takajo Distillery proudly presents NewBorn “ TAKAZO”.
We have matured New Pot with a refined taste obtained by concentrating all the knowledge of Meiri Sake Brewery, which has been in business for over 160 years, tripling the amount of yeast and more than doubling the fermentation period since the beginning.
The blend is composed mainly of the original sake from the “plum wine barrels” in which Meiri Shuzui’s flagship product, Hyakunen Umeshu, was aged.
The aroma is light with plums, and the taste starts with raisin-like sweetness and ends with a spicy flavor.
